Have you ever eaten a garlic scapes? These are the flower stem from the garlic plant. Deliciously garlickly. Use scapes in your cooking the same way you would use bulb garlic, scallions, or onions. They can be roasted, stir fried, braised, or sauteed. And they can be made into garlic scapes pesto!
Garlic Scapes Pesto
10 to 12 garlic scapes chopped finely
1/3 cup pistachio, sunflower seeds, or pine nuts
1/3 cup grated Parmesan cheese
1/3 cup extra virgin olive oil (about)
salt and pepper
1 +/- Tbsp lemon juice
In a food processor pulverize scapes, cheese, nuts/seeds.
Add in salt, pepper, and lemon juice to taste.
Slowly add in olive oil to desired consistency.
Keeps in the refrigerator for a week.
(toss with hot pasta!)
